  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 lemon (zested and juiced)
  • 4 cloves garlic (minced)
  • 2 teaspoons honey
  • 1 tablespoon dried oregano
  • 1 teaspoon onion powder
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 pound chicken (breasts or thighs)

Instructions

  1. In a medium bowl, whisk together olive oil, red wine vinegar, lemon zest and juice, minced garlic, honey, oregano, onion powder, salt, and black pepper until well combined.
  2. Place chicken in a Ziploc bag or casserole dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to overnight).
  3. Before cooking, let the marinated chicken sit at room temperature for about 20 minutes.
  4. Cook the chicken on a grill, in an oven preheated to 375°F (190°C), or on a stovetop over medium heat until it reaches an internal temperature of 160°F.
