  • 16 oz cream cheese (2 blocks, softened)
  • 1/2 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract (or vanilla bean paste)
  • 1 tablespoon all-purpose flour
  • 1 cup pecans (roughly chopped)
  • 1/4 cup light corn syrup
  • 1/3 cup light brown sugar
  • 1/3 cup heavy cream
  • 1/4 teaspoon cinnamon
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, melted butter, and salt in a bowl; press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth, then add granulated sugar and brown sugar. Mix in eggs one at a time along with vanilla extract and flour.
  4. Pour cheesecake filling over the crust and bake for about 35 minutes until set but jiggly.
  5. Prepare topping by melting butter in a saucepan; stir in corn syrup, brown sugar, heavy cream, cinnamon, vanilla extract, and salt. Add chopped pecans.
  6. Spread pecan mixture atop cheesecake; return to oven for an additional 10-15 minutes until bubbly.
  7. Cool at room temperature before refrigerating for at least two hours before slicing.
