  • 1 1/2 cups water
  • 1/4 teaspoon cream of tartar
  • 1 cup cornstarch
  • 1/4 teaspoon salt
  • 2 teaspoons rosewater
  • 1/2 cup shelled pistachios, roughly chopped
  • Powdered sugar and cornstarch for dusting

Instructions

  1. Lightly grease a baking dish or line it with parchment paper.
  2. In a heavy-bottomed saucepan, combine sugar, water, and cream of tartar; stir until dissolved.
  3. Bring the mixture to a boil over medium heat until it reaches 240°F (soft-ball stage).
  4. In a bowl, whisk together cornstarch, salt, and 1 cup water; gradually add this to the hot sugar mixture while stirring continuously.
  5. Return to low heat and cook for about 30 minutes or until thickened.
  6. Stir in rosewater and chopped pistachios.
  7. Pour into the prepared dish, smooth it out, and let cool at room temperature for at least four hours.
  8. Dust with powdered sugar before cutting into squares.
