  • 1 cup small diced tomatoes
  • 1/2 cup small diced bell peppers
  • 3 tablespoons small diced red onions
  • 1/2 fresh lime
  • 1 big squeeze fresh lemon juice
  • 2 tablespoons minced cilantro
  • 1 teaspoon minced jalapeno
  • 1/2 teaspoon kosher salt

Instructions

  1. Prepare the guacamole: Mash avocados in a bowl; mix in lime juice, lemon juice, salt, cilantro, red onion, and jalapeno.
  2. Create the creamy cotija layer: Combine sour cream, cotija cheese, mascarpone (or cream cheese), lime juice, cilantro, and salt until smooth.
