  • 2 packs udon noodles
  • 200 g fresh beef (thinly sliced)
  • 1 white onion (sliced)
  • Chinese cabbage (or leafy greens of choice)
  • 1 tbsp garlic (minced)
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 3 tbsp dark soy sauce
  • 2 tsp fresh ground black pepper
  • 3 tbsp water
  • 1/2 tsp potato starch
  • Salt to taste
  • Sugar to taste

Instructions

  1. Prepare the marinade by whisking together garlic, sesame oil, soy sauce, oyster sauce, vinegar, and cornstarch slurry in a bowl. Coat the beef and let marinate for 10 minutes.
  2. Boil udon noodles in water for 1-2 minutes until loosened. Drain and set aside.
  3. Combine leftover marinade with dark soy sauce, oyster sauce, black pepper, water, and potato starch to create the black pepper sauce.
  4. Heat a wok over medium heat; stir-fry garlic and onions until softened. Add marinated beef and cook until browned.
  5. Stir in the black pepper sauce until thickened, then add cooked udon noodles and cabbage. Toss to combine and serve hot.
