  • 2 cups sliced carrots
  • 2 cups sliced sweet potatoes
  • 2 cups diced apple (preferably Fuji or Honeycrisp)
  • 2 lbs ground lean turkey
  • 3 cups crushed tomatoes
  • 1 can kidney beans (optional)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt (divided)
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage (divided)
  • 1/2 tsp cinnamon
  • a sprinkle of nutmeg
  • 3 tbsp tomato paste
  • 2 tsp chili powder

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots, sweet potatoes, and diced apples. Season with onion powder, garlic powder, salt, pepper, sage, cinnamon, and nutmeg. Cook for about 5 minutes.
  3. Stir in ground turkey and cook until browned (about 5 minutes).
  4. Mix in tomato paste and chili powder until well combined.
  5. Add crushed tomatoes; stir well and let simmer on low-medium heat for 20-30 minutes.
  6. If using kidney beans, add them just before serving.
