  • 1 tablespoon unsalted butter
  • 1 cup yellow onion, diced
  • 1 cup celery, sliced
  • 1 leek, sliced
  • 1/4 cup all-purpose flour
  • 1/2 cup dry white wine
  • 1 lb Yukon gold potatoes, sliced
  • 2 cups low-sodium chicken broth
  • 1 cup half-and-half
  • 3 cups shredded leftover turkey or chicken
  • Fresh herbs: thyme and sage

Instructions
