  • ⅓ cup sun-dried tomatoes, chopped

  • ½ cup heavy cream (or non-dairy alternative)
  • ⅓ cup white wine
  • 4 cups low-salt chicken broth
  • 3 cups shredded chicken (preferably rotisserie)
  • 1 (15 oz) can cannellini beans, rinsed and drained
  • 2 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions for about 2 minutes until translucent.
  2. Add sliced carrots and cook for another 3 minutes. Stir in garlic and cook until fragrant.
  3. Mix in tomato paste and sun-dried tomatoes; cook for 1–2 minutes to enhance flavors.
  4. Pour in white wine and reduce slightly before adding chicken broth and heavy cream.
  5. Stir in cannellini beans and seasonings but hold off on adding bay leaves at this stage.
  6. For a creamier texture, blend a portion of the soup before returning it to the pot.
  7. Add shredded chicken and bay leaves; simmer on low heat for at least 15 minutes.
  8. Remove bay leaves and stir in fresh spinach until wilted.
