  • 4 salmon fillets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 34 sun-dried tomatoes (sliced)
  • ½ cup dry white wine
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (grated)
  • 1 cup fresh spinach

Instructions

  1. Pat the salmon dry and season with salt and pepper. Heat olive oil and butter in a frying pan over medium-high heat. Sear the salmon skin-side up for about 6-7 minutes until golden.
  2. In the same pan, sauté minced garlic and sun-dried tomatoes for about 30 seconds. Deglaze with white wine, simmering until reduced by half.
  3. Add heavy cream and Parmesan cheese, stirring to combine. Stir in fresh spinach and return the salmon to the pan. Simmer on low heat for an additional 5 minutes.
