  • 1 1/2 cups brown lentils
  • 12 corn or flour tortillas
  • 1 large white onion, diced
  • 2 cloves garlic, minced
  • 2 cans Rotel tomatoes with green chilies
  • 4 cups vegetable broth
  • Vegan taco seasoning

Instructions

  1. In a pot, combine brown lentils, diced onion, garlic, jalapeño, Rotel tomatoes, vegetable broth, and taco seasoning. Bring to a boil and simmer for about 20 minutes until lentils are tender.
  2. Preheat your air fryer to 375°F or oven to 400°F.
  3. Take a tortilla, fill it with the lentil mixture, and roll tightly into a taquito shape. Repeat until all tortillas are filled.
  4. For air frying: Cook taquitos in a single layer for about 10 minutes until golden brown. For baking: Arrange on a baking sheet and bake for 15–20 minutes until crispy.
  5. Serve hot with salsa or vegan sour cream.
