  • 1 large lemon, cut into chunks (rind included)
  • ½ cup olive oil, divided, plus extra for drizzling
  • 5 large garlic cloves
  • 8 oz. block feta cheese
  • 8 oz. block cream cheese (or ricotta)
  • ¼ cup honey, plus extra for drizzling
  • 1 tsp. red pepper flakes, plus more for garnish
  • 1 tsp. fresh thyme, plus more for garnish
  • 1 tsp. fresh oregano, plus more for garnish

Instructions

  1. Preheat the oven to 400°F (200°C), and line a baking sheet with parchment paper.
  2. Place lemon chunks on the baking sheet; drizzle with olive oil. In a ramekin, cover garlic cloves with ¼ cup of olive oil and place it on the baking sheet.
  3. Roast for about 15 minutes until soft.
  4. In a food processor, combine the roasted lemon (with rind), feta cheese, cream cheese (or ricotta), remaining olive oil, honey, red pepper flakes, thyme, oregano, and roasted garlic with its oil. Blend until smooth.
  5. Transfer to a serving dish; garnish with Kalamata olives, honey drizzle, additional herbs, and serve with toasted baguette or fresh veggies.
