  • 1 1/2 cups graham cracker crumbs
  • 24 oz cream cheese (softened)
  • 6 oz fresh raspberries
  • 3/4 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 4 oz white chocolate (melted)
  • 2 eggs
  • 1/4 cup dark brown sugar
  • 5 Tbsp butter (melted)
  • 1 tsp vanilla
  • 4.4 oz white chocolate bar (goes on top of pressed crust)
  • 2 tbsp plain yogurt
  • 1 tsp vanilla extract
  • 1 1/2 Tbsp corn starch
  • 3/4 cup white granulated sugar (for raspberry swirl)
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract (for raspberry swirl)
  • 1/2 Tbsp cornstarch (mixed with a splash of cold water)
  • 4 oz white chocolate (bar or melts) (melted)

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, sugar, melted butter, and vanilla. Press into a springform pan.
  2. Melt white chocolate and drizzle over the crust. Bake for 10 minutes and cool.
  3. Beat cream cheese until smooth; gradually add whipping cream, yogurt, eggs, vanilla, cornstarch, and sugar until creamy.
  4. In a saucepan, combine raspberries, sugar, lemon juice; cook until the mixture thickens.
  5. Pour half of the filling over the crust; add raspberry mixture in dollops and swirl gently before adding remaining filling.
  6. Bake for about 85 minutes or until slightly jiggly in the center. Cool gradually before refrigerating for at least four hours.
