  • 1 cup white chocolate chips
  • 1 cup Reese's peanut butter cups (chopped)

Instructions

  1. In a large mixing bowl, cream together 1 cup softened unsalted butter, 1 cup granulated sugar, and 1 cup packed light brown sugar until fluffy.
  2. Add 2 eggs one at a time, mixing well after each addition.
  3. Stir in 1 teaspoon vanilla extract.
  4. In another bowl, whisk together 3 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually mix dry ingredients into the wet mixture until combined.
  6. Chill the dough for 1 hour.
  7. For the cheesecake filling: Beat together 8 oz softened cream cheese with 1/4 cup granulated sugar, 1 egg, and 1 teaspoon vanilla extract until smooth.
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  9. Scoop chilled cookie dough onto prepared sheets; flatten into disks.
  10. Place a spoonful of cheesecake filling in the center and fold edges to seal.
  11. Roll into balls and space them on the sheet.
  12. Bake for about 10-12 minutes until edges are golden.
  13. Allow cooling on the sheet for five minutes before transferring to a wire rack.
  14. Melt 1 cup white chocolate chips in intervals; drizzle over cooled cookies and top with chopped Reese’s.
