  • 1 medium red bell pepper, diced
  • 1 medium cucumber, diced
  • 1/2 small red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (approximately 2 tbsp)
  • 1 tsp chili powder (adjust to taste)
  • 2 tbsp extra virgin olive oil
  • Salt to taste

Instructions

  1. Rinse and drain the chickpeas. Chop the red bell pepper, cucumber, red onion, and cilantro into bite-sized pieces.
  2. In a large bowl, combine the chickpeas and chopped vegetables. Squeeze in fresh lime juice and drizzle with olive oil. Sprinkle in chili powder and add salt to taste.
  3. Toss everything until well combined. Cover and chill in the fridge for about 30 minutes to enhance flavors.
