  • ¾ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup fresh lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • ½ cup whole milk
  • 1 cup powdered sugar (for frosting)
  • 4 oz cream cheese, softened (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in lemon juice and zest.
  5. Gradually add the dry ingredients and milk alternately to the wet mixture, mixing gently until just combined.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting with whipped cream cheese mixed with powdered sugar.
