  • 2 cloves garlic, minced

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 tsp salt
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved

Instructions

  1. Marinate the shrimp by mixing lime juice, garlic, paprika, salt, and pepper in a bowl. Add shrimp and let sit for 15 minutes.
  2. Rinse jasmine rice under cold water. In a rice cooker or saucepan, combine rice, coconut milk, water, and salt. Cook until tender.
