  • 2 large eggs
  • 12 Tbsp unsalted butter, melted
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups shredded zucchini
  • 1 cup chopped pecans
  • 4 Tbsp unsalted butter (for frosting)
  • 1/2 cup brown sugar (for frosting)
  • 2 Tbsp milk or cream (for frosting)
  • pinch salt (for frosting)
  • 1 1/2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased and parchment-lined 9×9 baking pan.
  2. In a large bowl, whisk together eggs, melted butter, sugars, salt, spices, and vanilla until well combined.
  3. Stir in baking soda and then gently fold in flour until just mixed.
  4. Add shredded zucchini and chopped pecans, distributing evenly throughout the batter.
  5. Pour the batter into the prepared pan and bake for 35-45 minutes or until a toothpick comes out clean.
  6. For the frosting, melt butter in a saucepan over medium heat, then stir in brown sugar, milk or cream, and salt until smooth. Remove from heat and whisk in powdered sugar until combined.
  7. Pour frosting over warm bars for easy spreading.
