  • 3/4 teaspoon fine sea salt
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled and quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 23 tbsp Turbinado sugar (optional)

Instructions

  1. Make the Brown Butter Crust: Melt cold unsalted butter in a saucepan over medium heat until golden brown. Let cool slightly. In a bowl, combine flour and salt; add cooled brown butter and mix until crumbly. Slowly add water and vinegar until dough forms. Chill for 30 minutes.
  2. Prepare the Filling: Combine sliced peaches and strawberries in a bowl; sprinkle with sugar, cornstarch, lemon juice, and salt. Stir gently to mix.
  3. Assemble the Pie: Preheat oven to 375°F (190°C). Roll out half of the chilled dough into a pie dish; fill with fruit mixture. Roll out remaining dough for the top crust or create a lattice pattern.
  4. Bake: Brush egg over the crust, sprinkle with Turbinado sugar if using, and bake for about 70 minutes until crust is golden and filling bubbles.
  5. Cool & Serve: Allow the pie to cool for at least one hour before slicing. Serve warm with vanilla ice cream.
