  • 2 large chicken breasts (or 4 medium)
  • 1 Tbsp olive oil
  • Kosher salt & black pepper
  • 3 Tbsp butter
  • 1 Tbsp chicken base
  • 4 Tbsp all-purpose flour
  • 2 cups chicken stock
  • Optional: 1/4 cup heavy cream

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Cook chicken for about 5 minutes per side until cooked through (165°F). Remove and set aside.
  3. Lower heat; add butter and chicken base, stirring until melted.
  4. Mix flour, onion powder, and garlic powder in a small bowl; add to the skillet while stirring for about 30 seconds.
  5. Gradually pour in chicken stock while whisking until smooth. Simmer until thickened.
  6. Optionally stir in heavy cream for richness.
  7. Shred the chicken if desired; return it to the skillet along with juices and simmer briefly.
  8. Serve warm over mashed potatoes.
