  • 3 tbsp olive oil
  • 8 chicken sausage links
  • 1/2 yellow onion, diced
  • 3 garlic cloves, minced
  • 1 15 oz can of tomato sauce
  • 2 14.5 oz cans of Fire Roasted tomatoes
  • 1 48 oz chicken broth
  • 1 15 oz white cannellini beans (drained & rinsed)
  • 2 8 oz packages of tortellini (cheese or spinach)
  • 1 cup fresh spinach
  • 1/2 cup Half & Half
  • 1 1/2 tsp basil
  • 2 tsp salt
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Chile Con Carne Seasoning
  • 1 tbsp arrow root powder + 2 tbsp warm water

Instructions

  1. In a large soup pot, heat olive oil over medium heat. Sauté diced onion and minced garlic until fragrant (about 3–4 minutes). Add sliced chicken sausage, cooking for an additional few minutes.
  2. Stir in tomato sauce, fire roasted tomatoes, chicken broth, and seasonings (basil, salt, cumin, garlic powder, onion powder). Bring to a boil then simmer for at least one hour.
  3. Add tortellini and cook for about five minutes until tender.
  4. Lower heat and mix in half & half, spinach, and drained cannellini beans. For thickening, combine arrowroot powder with warm water; stir into soup. Heat through before serving.
