  • 4 nectarines, pitted and quartered
  • 8 ounces burrata cheese, torn
  • 8 slices prosciutto
  • 4 ounces cherry tomatoes, halved
  • 2 heirloom tomatoes, halved and cut into eighths
  • 1/2 cup fresh cherries, pitted and halved
  • 1/2 cup mixed baby spring greens
  • 2 tablespoons fresh lemon juice
  • 1/2 cup extra virgin olive oil

Instructions

  1. Preheat a grill or grill pan over medium-high heat. Brush the nectarines lightly with olive oil.
  2. Grill the nectarines for 2-3 minutes on each side until grill marks appear. Remove from heat to cool.
  3. In a small bowl, whisk together lemon juice, olive oil, and seasoning for the vinaigrette.
  4. In a large bowl, combine mixed greens, cherry tomatoes, heirloom tomatoes, cherries, and vinaigrette.
  5. Top with torn burrata and prosciutto slices before serving.
