  • 1/2 cup ube halaya (purple yam jam)
  • 3/4 cup granulated sugar
  • 1 tsp baking powder

  • 1/4 cup vegetable oil
  • Powdered sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, mix the sugar and vegetable oil until combined. Add the egg and ube halaya, mixing until smooth.
  4. Gradually fold in the dry ingredients until just combined; avoid overmixing.
  5. Chill the dough for about 30 minutes in the refrigerator.
  6. Scoop tablespoon-sized portions of dough, roll them in powdered sugar, and place them on the prepared baking sheet about two inches apart.
